Gluten (gliadins) are proteins present in wheat, rye, barley, spelt, kamut and in all products based on these grains. Buckwheat and oats are naturally gluten-free. Nevertheless, they are prohibited within the gluten-free diet because there is always a chance of cross-contamination. Only oats and buckwheat bearing the gluten-free logo are allowed.    <\/p>\n<h3>Different types of complaints<\/h3>\n<p>The symptoms that develop in celiac disease vary from person to person and are mainly due to the reaction to gluten and the associated damage to the lining of the intestine. Some people have hardly any symptoms at all. The most common symptoms are chronic diarrhea, constipation, highly variable stools, abdominal pain, bloating and flatulence. Misunderstood gluten intolerance can also eventually result in severe anemia with the accompanying symptoms of fatigue and lethargy. With gluten intolerance, nutrients are not absorbed as well, increasing the risk of deficiencies of essential nutrients over time.
